halva

We talked about some traditional greek recipes, which are world-famous. The recipe of Halva was one of the students” favourites.

HALVA (MADE WITH SEMOLINA)

2 cups of coarse semolina
1 cup of olive oil
2 cups of sugar
½ cup of honey
5 cups of water
¾ cup of almonds, finely chopped
¼ cup of sultanas (golden raisins)
1 tablespoon of cinnamon

Put oil in a saucepan to heat. Add the semolina and stir constantly with a wooden spatula. Add ½ cup of the almonds, while you keep on stirring to avoid burning the mixture. In the meantime, put the sugar, the honey and the cinnamon with the water in another saucepan to boil for 4 minutes.
When the semolina has turned dark yellow, add the raisins. Lower the heat and pour in the sugar syrup. Continue stirring until the mixture thickens and the syrup is absorbed. The halva is ready when it is easily detached from the saucepan.
Remove the saucepan from the kitchen ring and cover it with a towel for five minutes. Then place the halva in a mould and when it has cooled, remove from the mould to a flat dish, sprinkling again with cinnamon and almonds.
