Potato balls

Ingredients:

  • 3 cups mashed potatoes (cooled)
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (you can use seasoned breadcrumbs for extra flavor)
  • Salt and pepper to taste
  • Oil for frying

Instructions:

  1. Ensure the mashed potatoes are well-cooled. You can use leftover mashed potatoes or prepare a fresh batch and let it cool.
  2. In a large mixing bowl, combine the mashed potatoes, shredded cheddar cheese, chopped green onions, flour, salt, and pepper. Mix until well combined.
  3. Scoop out a portion of the potato mixture and shape it into a ball using your hands. The size can vary based on your preference, but aim for golf ball-sized potato balls.
  4. Roll each potato ball in the beaten eggs and then coat it with breadcrumbs, ensuring an even coating.
  5. In a deep fryer or a large, deep skillet, heat enough oil for frying to 350°F (180°C).
  6. Carefully place the coated potato balls into the hot oil, a few at a time, and fry until they are golden brown and crispy. This usually takes about 3-4 minutes.
  7. Use a slotted spoon to remove the potato balls from the oil and place them on a plate lined with paper towels to drain any excess oil.
  8. Serve the potato balls while they are still warm. They are delicious on their own or with a dipping sauce of your choice, such as sour cream, ketchup, or a garlic aioli.
