Authentic Greek salad – Horiatiki

Ingredients…
● 6-8 tablespoon(s) olive oil
● 2 tablespoons(s) vinegar, of white wine
● 1 tablespoon(s) honey
● salt – pepper
● 2 tablespoon(s) oregano, dry
● 350g cherry tomatoes
● ⅓ onion
● 1 green bell pepper
● ½ cucumber
● 1 tablespoon(s) capers
● 150g feta cheese
● 50g olives
To serve…
● rusks
Let’s get cooking…
● In a bowl, add 4-5 tablespoons of extra virgin olive oil, the vinegar, honey, salt, pepper and 1 tablespoon oregano. Gently stir with a spoon just to combine, you don’t want to emulsify the dressing.
● Chop the cherry tomatoes in half and add to the bowl.
●Thinly slice the cucumber into half – moon shapes and thinly slice the onion. Add to the bowl.
● Cut the green pepper into thin strips and add to the bowl.
● Add the olives, capers, feta and 1 tablespoon oregano.
● To finish, drizzle with 2 – 3 tablespoons extra virgin olive oil, top with rusks and serve.
Perfect Purple Cupcakes
For The Cupcakes…
●150 grams plain flour
●150 grams sugar
●150 grams soft butter
● 3 large lightly beaten eggs
● ½ teaspoon vanilla essence
●1 teaspoon baking powder
For The Butter Cream Icing…
●180 grams soft butter
●250 grams icing sugar
● 1 teaspoon vanilla essence
● ½ teaspoon salt
● red and blue food colouring
A. Preheat your oven to 180°C and place 12 paper cupcake cases on a baking tray.
B. Place butter and sugar into a bowl and beat with an electric mixer until the butter changes colour (generally 2 minutes).
C. Add lightly beaten eggs to the mixture a little at a time, beating on slow for 15 seconds between each addition. Add vanilla, flour and baking powder and mix for a further minute.
D. Fill the cases with the mixture until they are approximately two thirds full and then place on the middle shelf in your preheated oven.
E. Bake for approximately 20 minutes, then remove and allow the cool.
F. To make the butter cream icing, put butter in a bowl along with icing sugar, vanilla and salt. Add purple food colouring (3 parts red to 1 part blue) and mix with an electric mixer until light and fluffy.
G. Use a spatula or the flat side of a knife to spread a little icing on each cupcake.
H. Decorate with a few purple sprinkles and serve.
